Frequently asked questions
Twelve short answers to the questions we field every week on the phone.
How much does donkey cheese cost?
There is no fixed price. It depends on the jennies' lactation, the volume available, the quantity you order and transport. We issue a firm quote within 24 working hours, VAT and customs included.
Why is it so expensive?
A jenny gives about one litre of milk a day and it takes roughly twenty-five litres to make one kilo of cheese. Add a herd of only a few hundred animals and a technically difficult production process: the scarcity is structural.
Is donkey cheese made only from donkey milk?
No. Donkey milk is low in casein and barely coagulates. Commercial cheeses are blends, with donkey milk as the main component topped up with goat's milk. We always state the real composition of the batch.
What does it taste like?
A dry, crumbly white to ivory paste, lactic and saline, with a length close to an aged pecorino. The animal note is discreet.
Do you deliver anywhere in Switzerland?
Yes, to all 26 cantons and to Liechtenstein, in insulated packaging. Allow 24 to 48 hours in transit once the batch is confirmed. For delivery elsewhere in Europe, write to us: we handle it case by case, with destination customs and VAT on top.
What is the real lead time for an order?
It depends on batch availability in Serbia: from a few days to several weeks. For a fixed date — birthday, banquet, festive season — allow three to four weeks.
Can I order a very small quantity?
Yes. Many of our private customers order between 50 and 250 grams for a tasting or a gift.
Is it suitable for people who are lactose intolerant?
No. The product contains residual lactose and milk proteins. If you have an allergy or an intolerance, ask us for the full label before ordering.
How should it be stored?
Between 4 and 8 °C, wrapped in cheese paper, never in direct contact with cling film, and never frozen. Take it out thirty to forty-five minutes before tasting.
Do you supply restaurants?
Yes. We provide a product sheet, an availability calendar and Swiss invoicing. Never print the product on a menu before the batch is confirmed.
Are pule and donkey cheese the same thing?
Pule is the name of the Serbian donkey cheese popularised by the Zasavica reserve. Not every donkey cheese is pule, but it is the best known.
How do I pay?
Payment terms are set out in the quote. For a first order a deposit may be requested, given the value of the goods.
